Let's talk about potato salad. Lord knows there are many recipes, but my  mom made the best potato salad. I asked her so many times how to make it. I'm sure she had some secret in her purse, she did! Everything but the kitchen sink was in it. I just could not make it. I tried many times but I wasn't successful. When I needed potato salad I had to ask her, making that her special task. Unfortunately my mother is no longer with us and neither is her potato salad. I had to come up with my own, and  I do believe I have come up with a winner. People have been asking me for this recipe for years. Unfortunately I couldn't give it to them, because they didn't have the spice crack and it would not have been a useful recipe. Creole -Potato Salad

Serves 8-10 

5 lbs Red Skin potatoes

2 large bunches of Green Onions

1/4 lb Butter

1 lb of Bacon

2 cups of Hellmann's Mayo also known as Best Foods

Spice Crack New Orleans Blend

Instructions:

Clean and wash potatoes, cut into medium sized cubes. Put potatoes in salted cold water and cover. Cook until rolling boil and tender. Drain potatoes, make sure you get all remaining water off. Put potatoes in large bowl. Melt butter and drizzle over potatoes. Generously toss with New Orleans Blend Spice Crack, (I would use about two tablespoons) the more you use the hotter it will get. Let this mixture cool for half an hour. While potatoes are cooling cook bacon until crispy (not burnt). Drain off all bacon grease, paper towels work great! Clean, wash, and dry green onions, cut all of the onion into small pieces. Crumble bacon. Lightly toss bacon and onions  with potato mixture. Add mayonnaise. All Done,  Mozell's Creole Potato Salad! Lagniappe- Cook bacon flat on cookie sheet in the oven, it comes out perfect!
